Garassino is an additional Barbaresco geographical denomination located in the northwestern part of the municipality of Treiso, known for the personality and elegance of its wines. Here, the soil is more recent, dating back to the Tortonian (Sant’Agata Fossil marl), and the vineyards occupy the two slopes of the hillside, facing east and west respectively.
Vinification: Fermentation, with submerged cap maceration, lasts 10-12 days at a temperature of 28°C. Finally, the wine is aged first in oak tonneaux and then in large barrels for a minimum of 12 months. Bottling follows and subsequent aging until a minimum of 24 months is reached, calculated from November 1st of the year the grapes were harvested. Tasting notes: The color is intense garnet red and the aroma is broad, reminiscent of violets and dried roses, undergrowth with notes of vanilla and spices. On the palate, it is complex, yet at the same time fresh, harmonious, and persuasive, with a refined classicism.
Recommended pairings: Excellent with rich first courses and important second courses of meat, game, and mature cheeses. Suggested serving temperature: 18-20°C.
